Fig Slice
Makes 24 slices
  • 2 cups Soland dried figs, chopped
  • ¾ cup apple juice
  • 155g butter
  • ¼ brown sugar
  • 2 tablespoons Soland L.S.A. Mix
  • 1 cup Soland Organic wholemeal plain flour
  • 1 cup Soland rolled oats
  • ¼ cup Soland pecan nuts, chopped

  • Grease and line 19cm x 29cm lamington pan.
  • In a medium saucepan combine juice and figs.
  • Bring to boil, then on low heat simmer covered until figs are tender approx 5 minutes. Allow to cool.
  • Cream butter and sugar with an electric mixer until white and fluffy. Stir in the fig mixture.
  • Mix in all remaining ingredients.
  • Bake for 40 minutes in a moderate oven or until brown. Allow to cool in pan before removing.
